Poor storage of peanuts can lead to an infection by the mould fungus Aspergillus flavus, releasing the toxic substance aflatoxin. The aflatoxin-producing moulds exist throughout the peanut growing areas and may produce aflatoxin in peanuts when conditions are favourable for fungal growth. Peanuts are a good source of niacin, folate, fibre, magnesium, vitamin E, manganese and phosphorus. New research shows peanuts rival the antioxidant content of many fruits.
